Проектування подрібнювача для виготовлення ковбасних виробів

Abstract

У роботі досліджено оптимальні конструктивні та кінематичні параметри робочого шнека подрібнювача, виявлено основні залежності, визначено металомісткість і енергетичні витрати на процес транспортування м'яса робочим шнеком подрібнювача. Проведена механізація процесів подрібнення м’яса для виробництва ковбасних виробів за допомогою подрібнювача (вовчка) К6-ФВП-160. Особливу увагу звернули на споживчу та транспортну тару, розробили їхню конструкцію, маркування, розглянули пакувальні матеріали з яких вони можуть виготовлятись. В експлуатаційні частині представлений монтаж, ремонт і умови експлуатації машини, особливості експлуатації вузла, проведено загальні розрахунки і опис транспортно – складської системи дільниці. В розділі охорона праці розглянуті основні питання з аналізу виробництва, охорони навколишнього середовища, пожежної безпеки дільниці виготовлення ковбасних виробів. In the work, the optimal structural and kinematic parameters of the working screw of the shredder were investigated, the main dependencies were revealed, the metal content and energy costs for the process of meat transportation by the working screw of the shredder were determined. The mechanization of meat grinding processes for the production of sausage products was carried out using the К6-ФВП-160 grinder. Particular attention was paid to consumer and transport containers, their design and labeling were developed, packaging materials from which they can be made were considered. The operational part presents the installation, repair and operating conditions of the machine, features of the unit operation, general calculations and a description of the transport and storage system of the station. In the labor protection section, the main issues of analysis of production, environmental protection, and fire safety of the sausage production site are considered.
